After mixing the grain, the whole mixture is now kept for fermentation.

In the process, the kefir produces carbon dioxide that will carbonate the liquid in the jar and make it fizzy. The empty space in the jar helps accommodating the gas, thus preventing the glass jar from explosion.

Add other optional ingredients if required, and seal the jar completely. Allow it to ferment for around 1 to 3 days.

After the fermentation is complete, strain the liquid and preserve the grains as they are reusable. Transfer the drink into small bottles again up to three quarters only. Keep aside for 24 hours.

Kefir is now ready to be served.
